Smoking a steak with hickory smoke, is it a good idea?
I was trying to find reviews on how they come out but I couldn't find anything. I didn't know if this was a terrible combination, because I figured I would sear it open flame 1 minute on each side then move the coals off to the side and throw some hickory chips on top. Then let it cook indirectly to the heat for another 15 minutes for medium .
Do you think this will work out well?
As you already know, a steak's best flavor is preserved when it is seared to a rare to medium rare.
